Variations and notes

Notes

Use clear (runny) honey. You can swap the type of honey and the tea for different flavours, and the spices can be varied or left out, but don't use too much or it gets sickly.

The cake keeps for weeks without a fridge because of all the sugar and honey, and it tastes best after a few days.

Flaked almonds can be swapped for sesame seeds or ground hazelnuts.
